VEgan NACHOS WITH BARBECUE JACKFRUIT
They say that ambrosia is the food of the gods, but this right here is food worth being mortal for! This recipe is inspired by a trip to Portland for the Vegan Beer and Food Festival. It was such a good time filled with beers, great food, and awesome people. One of the vendors selling mouth watering fare at the fest were non other than Upton Naturals, who make meat alternatives including jackfruit!
Now, if you haven’t heard of it, jackfruit in a large fruit originating from southeast asia. It has become quite popular in the U.S. in recent years as a meat alternative because when the green fruit is cooked and flavored, it resembles pulled pork or chicken.
While there were a lot of great treats being sold at the festival, Upton Naturals Jackfruit Nachos really stole my heart, so of course I had to recreate at home.
INGREDIENTS
- I bag of your Favorite Tortilla Chip
- 1 Cup Nacho Sauce (Recipe Follows this one)
- 2 20 Ounce Can Green Jackfruit in Water
- 1 Cup Barbecue Sauce
- 1 Cup Water
- All the nacho toppings you like including,
- Black Beans
- Jalapeno
- Avocado
- Red Onion
- Cilantro
- Salsa
- Lime
INSTRUCTIONS
- Rinse jack fruit very well and remove seed pods.
- Chop the jackfruit, mostly chopping the harder core.
- Add jackfruit, BBQ sauce, and 1 cup water to a cast iron pan, other oven safe pan, or a small pot.
- Simmer on low for 25 to 35 minutes until most of the liquid is gone.
- Optional step for a drier crispier jackfruit. Heat oven to 425 degrees fahrenheit.
- Place pan of jackfruit in oven and bake for 15 minutes. If using a pot that is not oven safe, transfer jackfruit to an oven safe pan and bake for 15 minutes.
- Place tortilla chips on a large plate or platter and pour nacho sauce over the top. Sprinkle BBQ Jackfruit, and all other nacho toppings.
- Add more nacho sauce!
