2. Curly Fries




Ingredients
  • 2 medium russet potatoes
  • 6-10 cups vegetable or canola oil
Batter:
  • 1 1/2 cups flour
  • 5 TBS paprika
  • 2 1/2 tsp salt
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp cayenne powder
  • 1 tsp black pepper
  • 2 cups water
Instructions
  1. Cut the end off the potatoes so they are flat, one at a time, spiralize each potato. 
  2. Fill a large bowl with hot water (from the tap is fine, just make it hot), place the spiralized potatoes into the bowl, and let sit for 20-30 minutes. Strain
  3. Preheat oil in a deep fryer or large pot (high sides are key here). Oil temp should be about 375 degrees, and if you put it at medium heat for about 5 minutes you should reach this temp.
  4. In a bowl, make your batter: mix all dry ingredients with a whisk. Add water, then whisk until combined.
  5. Dip the potato slices into the batter, and then set onto a rack over parchment paper (for easy clean up), to let the extra batter fall off. Once they are all coated, place them into the preheated oil, careful not to crowd the pot/deep fryer- do it in batches. Fry for 4-5 minutes, then remove and place onto a paper towel lined baking sheet. Finish frying all the potatoes.
  6. Serve fries with ketchup or your favorite sauce.



3. Loaded Philly Cheesesteak Skillet Fries


Ingredients
  • 1 (32 ounce) bag Alexia Smart Classics Roasted Crinkle Cut Fries with Sea Salt
  • 2 tbsps olive oil, split
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 1/2 green bell pepper, diced
  • 1 red, orange or yellow bell pepper, diced
  • 8 ounces steak, thinly sliced
  • 8 ounces white American cheese, shredded
  • salt and pepper

Instructions
  1. Preheat your oven to 450 degrees.  Arrange frozen potatoes in a single layer on a baking sheet.  Bake for 22 minutes, stirring halfway through cook time.
  2. Meanwhile, heat the oil in a large cast iron skillet over medium-high heat.  Add the mushrooms, onions, and bell peppers to the hot oil and season with salt and pepper.  Cook for 5 minutes, stirring occasionally.  Remove the veggies to a bowl and add another tbsp of oil to the skillet.  Add the steak to the skillet and season with salt and pepper.  Cook for 3-4 minutes, or until the steak is no longer pink.  It will cook quickly is you have it sliced extra thin, as suggested.  Transfer the steak to a bowl.
  3. Remove the fries from the oven and lower the oven temperature to 350 degrees.  Place half of the fries into the cast iron skillet used to cook the meat and vegetables.  Top the fries with half of the steak, vegetables, and shredded cheese.  Repeat with the remaining fries, steak, veggies, and cheese.
  4. Place the skillet into the oven and bake for 7-10 minutes.  Serve immediately.

4. GARLIC CRAB FRENCH FRIES WITH GARLIC AIOLI

INGREDIENTS
  • Alexia 98% Fat Free Classic Roasted Crinkle Cut Fries
  • sea salt
*Garlic Butter*
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 minced garlic clove
*1/2 lb. crab (I used frozen)*
    *Garlic Aioli*
    • 4 tablespoons mayonnaise
    • 4 tablespoons sour cream
    • 1 minced garlic clove
    • salt and pepper (freshly cracked)
    INSTRUCTIONS
    1. Bake the french fries following the instructions of the bag.
    2. Cook the crab following package directions. Crack the shells and get the meat out and put it in a bowl.
    3. For the garlic butter put everything in a micro safe bowl and microwave until the butter melts, about 30 seconds. Set aside until the fries are ready to come out of the oven.
    4. Mix together the garlic aioli. Set aside until ready to use.
    5. To assemble, when the fries come out of the oven put them in a bowl. Pour the garlic butter over them. Give them a couple of tosses in the bowl. Put the fries in a serving dish. Sprinkle with a little sea salt.
    6. Top with the crab, spreading it out across the top. Put a few garlic aioli drizzles over the top and serve the remaining aioli on the side.

    INGREDIENTS:

    • Around 4 peeled fresh potatoes cut lengthwise into stick form ( I use Russet Potatoes)
    • These can be cut into any shape you like using a sharp knife (or you can use frozen if you prefer around 2 cups or more) cut enough for your family size
    • sea salt and freshly cracked pepper to taste
    • Garnishes
    • Italian grated cheese ( I used Romano and Parmesan mixed) generously sprinkled on top of cooked fries
    • Sprinkles of granulated garlic (lightly dust the tops with this)
    • 1 teaspoon from a small sprig Fresh chopped rosemary or dried
    • 1 tablespoon freshly chopped Italian parsley
    • 1/2 teaspoon each dried oregano
    • 1 teaspoon fresh chopped basil or 1/2 teaspoon dried
    • Optional: red pepper flakes or cayenne pepper
    • Marinara sauce for dipping

    INSTRUCTIONS:

    1. Cut the potatoes into 4 to 5 vertical slices then into sticks or other shapes you like.
    2. Deep fry the french fries in 300-degree oil (or in an air fryer if you have one to manufacturer instructions.) It takes around 25 minutes or more to brown. If using frozen, check the package instructions for times.
    3. Drain on paper towels.
    4. In a large bowl or paper bag place the fries in with all seasoning to taste, stir or shake gently to coat. Sprinkle with cheese to your taste, red pepper flakes if using and more garlic if you like. Salt, pepper to taste.
    5. Serve hot with your favorite marinara sauce or condiments for dipping.
    6. Optional: to make loaded potato fries: add shredded mozzarella and cooked loose sausage on top and fried long hots.

    Ingredients

    • 10 frozen chicken nuggets
    • 1/2 bag frozen french fries
    • 8 ounce bag Mexican mix cheese
    • 1/2 tablespoon diced green chili peppers i get the canned ones
    • 1/2 cup ranch dressing I used Kraft
    • 1 tablespoon diced garlic I use the jar kind
    • 8 slices bacon cut in half

    Instructions

    • Preheat oven to 450.
    • On one tray put fries on another put chicken nuggets.
    • Bake chicken nuggets for 10 minutes, bake fries for 17-20 (until they are cooked and crispy). While chicken nuggets and fries are cooking cook your bacon.
    • Get a skillet and put 1 tablespoon of diced garlic, add your bacon and cook till crispy. Remove and drain on paper towels. By this step your chicken nuggets will be done.
    • Get a medium sized mixing bowl and add bacon into the bowl, breaking it into pieces as you put it in. Then cut your chicken nuggets up in to little pieces, add ranch dressing, and chilis and mix it all together.
    • Get a baking dish that can go in the oven. By this time your fries should be done if not wait till they are done to continue.
    • Remove fries and put them in baking dish, top with the bacon ranch mixture and then sprinkle cheese on top. You have a full 8 ounce bag don't be afraid to use a lot, you want them cheesy!
    • Then put the whole thing in the over for 5 minutes to melt the cheese. Remove and enjoy (you could wait till they cool a bit but the smell was so amazing coming from the oven that we couldn't and we dove right in!)


    7. CHORIZO FRENCH FRY NACHOS

    INGREDIENTS

    • 1 tablespoon olive oil
    • 1 large white onion cut into small dice
    • 1 1/2 pounds frozen french fries
    • 1 tube of Cacique Beef Chorizo 9oz
    • 3/4 - 1 pound ground beef
    • 1 1/2 cups grated Cacique Queso Quesadilla cheese
    • 1 1/2 cups grated Cacique Mozzarella cheese
    • 1/2 cup fresh cilantro chopped
    • 1/3 cup Cacique Crema Mexicana
    • 1/4 teaspoon chipotle powder
    • 1/4 teaspoon ground cumin

    INSTRUCTIONS

    • Heat the olive oil on a pan and add the diced onions.
    • Cook on a medium heat until they start to caramelize and turn brown, about 20 minutes.
    • Lay the frozen french fries on a large baking tray and cook as per the manufacturers instructions.
    • In another pan, cook the chorizo and ground beef together, drain any grease that may appear leaving only the meat.
    • Make the chipotle crema by adding the chipotle powder and cumin to the crema and stirring until combined. Set aside.
    • Once the french fries are cooked, adjust the oven temperature to 425 degrees F.
    • Center the french fries in the middle of the baking tray and arrange the chorizo all over the fries.
    • Top with the diced onion and both types of grated cheese.
    • Place back in the oven and bake for about 5 minutes and the cheese has fully melted.
    • Drizzle the crema over the melted cheese and sprinkle with the chopped cilantro.
    • Serve at once on the baking tray.

    Ingredients

    • 30 ounce bag of french fries
    • 1 cup diced ham
    • 1/4 cup diced dill pickles
    • 1/2 tablespoon yellow mustard

    Swiss Cheese Sauce

    • 3 tablespoons butter
    • 3 tablespoons all purpose flour
    • 2 cups milk (I used 2%, can use whole or heavy cream for a creamier sauce)
    • 8 ounces chopped swiss cheese

    Instructions

    1. Bake the french fries as directed.
    2. Meanwhile to prepare the sauce melt the butter in a medium size saucepan over medium heat. Once the butter is melted whisk in the flour. Will be thick. Pour in the milk and stir to combine, as it heats this will thicken slightly. Add in the cheese and continue to stir as the cheese melts. Once the cheese is completely melted continue to stir. The sauce will thicken.
    3. When the sauce is thick, remove from heat.
    4. To assemble the fries, top the fries with the diced ham, diced pickle, drizzle with cheese sauce and mustard.
    5. Serve warm and enjoy!

    For beef:
    • 1/2 pound thinly sliced beef sirloin tips
    • 1 tablespoon sesame oil
    • 1 tablespoon low sodium soy sauce
    • 2 teaspoons brown sugar
    • 1/2 teaspoon sesame seeds
    For fries:
    • 1 pound frozen french fries
    • 1-2 cups shredded colby jack cheese
    • 2 cups chopped kimchi
    • 1 tablespoon minced cilantro
    • 1 tablespoon chopped green onion
    For sauce:
    • 1/3 cup sour cream
    • 2 teaspoons gochujang paste

    DIRECTIONS:

    For beef:
    In a small bowl add all ingredients and let marinate while the french fries cook.
    Once the fries are done heat a pan over high heat and saute beef until no longer pink. This will only take a few minutes.
    Remove beef from the pan and set aside.
    For fries:
    Prepare french fries according to package directions. Top with cheese and add back to oven until melted.
    While the cheese is melting over the french fries quickly saute your kimchi. Using the same pan your sauteed your beef add you kimchi and quickly cook until warmed through.
    Remove your cheese covered french fries from the oven and top with cooked kimchi, beef, cilantro, green onions and sauce.
    For sauce:
    In a small bowl whisk together until combined.
